Roasted Spicy Broccoli

I just realized I never told how to make the Spicy Broccoli from the 5 course meal I cooked for my husband. I must share because this recipe is a gift from the veggie gods! I say this because my husband (who hates vegetables) really likes this dish. He doesn't just tolerate this dish, he genuinely likes this dish!

Spicy Broccoli

Ingredients

  • Broccoli florets

  • Red pepper cut up

  • Red pepper flakes

  • Olive oil

  • Garlic minced

  • Lemon juice

Combined all ingredient's in large bowl and toss with hands.

Place contents of bowl on a pan and put into 400 degree preheated oven. Roast for about 15 minutes, stir and continue to roast for 15-20 minutes or until the veggies are tender.

Plate up the veggies and enjoy!

This is seriously the easiest and tastiest veggie dish. I love pretty much all veggies but you have no idea how happy it makes me that my husband (veggie hater) loves this dish!

  3. I'll have to try to make that for my husband. He's not a huge veggies fan but it sounds like he might like it.

  4. With a boyfriend veggie-hater at home, I may need to prepare some broccoli and test this for myself. :) Hopefully it works and he eats it!

  7. Nick would love this dish too! He eats about a cup of broccoli a day, can you believe it? He loves it. I love the combination of garlic and red pepper, with olive oil. I have to try this. Tonight I actually made broccoli soup.

Today I hid some spinach in Nick's smoothie. If your husband hates veggies, try that trick!
