Soup + Vampire Diaries

I just realized I didn't make my food post for yesterday. Ever since returning from St. Maarten I've been craving comfort food. First it was tomato juice and noodles and now another meal from my childhood.

Lunch

1 can Campbell's Chunky Sirloin Burger with Country Vegetables soup:


Add a half cup of rice:


Delicious and hit the spot! I really need to try some of the other Campbell's Chunky soup flavors!


While eating my lunch I watched about 3 episodes of the Vampire Diaries. I'm pretty sure this show is directed at the youngsters but I really liked it! I'm a kid at heart;)


Dinner

Chili is another comfort food for me. However, I decided to try out a new chili recipe instead of what I normally would make.

Ingredients
  • 1 tablespoon olive oil
  • 5 slices smoky bacon chopped up
  • 2 pounds ground sirloin
  • 1 large onion finely chopped
  • 5 cloves garlic finely chopped
  • 4 tablespoons chili powder
  • Salt and Pepper
  • 1/3 cup Worcestershire sauce
  • 1/4 cup brown sugar
  • 2 tablespoons Tabasco
  • 14 ounce can tomato sauce
  • 2 cups beef stock
In a large chili/soup pot add bacon and cook. Add the beef and cook until browned. Add the onion and cook until softened then add garlic, chili powder, a little salt and lots of pepper.

In a separate bowl, stir together the Worcestershire sauce, brown sugar, hot sauce and tomato sauce. Stir into the chili. Stir in the beef stock and bring to boil, then lower heat and cook until thickened.



I'm not sure where I got this recipe but where ever I got it, thank you! I thought it was really good and my husband loved the spice. Next time I will most likely add some beans!

  2. This looks like an Emril recipe. Josh would love it with the ground sirloin!! Soup and chili are both such fabulous winter foods! I can't get enough (even when its warm here ;))
