3 Month Shape-Up to the Healthy Living Summit

I was so excited to get tickets to the 2010 Healthy Living Summit. Not only does it sound like a great time with interesting topics being covered but it's being held not to far away from me! After the tickets were bought and I looked over the agenda, I took some time to reflect on how I have been treating my body this last month.

I've been eating bad food, not getting enough water and exercise as well as boozing it up way to often. I enjoy my life and feel like I should celebrate everyday but I need to realize that celebrating doesn't have to be crappy food and booze! Everything in moderation, right!?!

Well, I'm determined to start living a better life and the healthy living summit was the kick in the ass I needed to start.

I have compiled a list below of what I intend to do to live my healthy lifestyle. I'm going to try my hardest to stick to this plan at least until the 2010 HLS.


3 Month Shape-Up

  • Cut back on soda intake
  • Drink 64 ounces of water a day
  • Take out 1 time a week
  • Meal out 1 time a week
  • Cardio 3 times a week
  • Yoga or pilates at least 1 time a week
  • Spend more time outdoors
  • Work on communicating with friends and family
  • Wake up by 8:00am on workdays

I have lots of habits I would like to kick to the curb and some I would love to welcome into my life. I've read multiple theories on how long it takes for something to become a habit. It seems the range is anywhere from 21 days to 8 weeks. So I'm giving myself approximately 10 weeks to (cross my fingers) make some of the above healthy items a habit in my life:)

Added bonus: My husband is going to do this with me so hopefully we can both make some positive changes in our lives!!! It is so much easier to make changes when an important person in your life is willing to make them with you:)

Lazy Saturdays = Busy Sundays

My Saturday was not as productive as I had hoped. But I did get a couple things checked off my to-do list so that is something. It also means today is going to be filled with chores. I wish I had more time during the week to get stuff around the house done but I just don't. Which means I have to get crackin' on the weekends.

Currently have the dish washer running, load of laundry going, dog's walked, lunch served and blog entry going:) Things are getting done!

Let's take a look at yesterday's evening eats.

Thanks to my dad I was able to snack on this beef jerky he sent me. My favorite jerky, it is so good!


Salad with romaine hearts, carrots, cabbage, Parmesan cheese and lite ceasar dressing.



Remember this Runza recipe. Well we took the leftover meat and made sandwiches with mustard for lunch. This was really good but next time I will have to use the griddler to make it even better!



Dessert was some butterscotch (YUM!!!) pudding with some light cool whip on top.


It has been such a long time since I've had pudding. It was wonderful! Even better, my husband doesn't like it so that means more for me;)

Coffee, Magazines and Tots!

Happy Saturday everyone! I just love Saturday's, the entire day ahead of me to do whatever I want. The possibilities are endless:)

I'm just taking it easy today. Here is a look at what I would like to accomplish today:
  • Go through magazines
  • Bake cake
  • Clean kitchen
  • Couple loads of laundry
All these tasks are totally doable.

So far I've started off my day with a cup of coffee with vanilla, milk and cinnamon.

For lunch, my husband and I shared a plate of Lawry's spiced tator tots, dipped in spicy BBQ sauce:



When I was taking the tots out of the oven I actually singed my eyelashes, and I can't afford to lose the little amount of lashes I have. I think the universe was telling me I shouldn't be making tator tots;)

I do believe a salad will be in my future, I'm craving vegetables in a bad way!

Right now I'm trying to plow through this stack of magazines. Then I have another stack I need to work through. I'm a bit of a magazine junkie!

The Winter Blues

My life has been so boring recently. I think I always tend to feel this way following the holidays. It's like I was going 120 mph and now I'm at a standstill, sort of. I have lots of things I need to do but not motivation to do any of them. I might have a touch of the winter blues:( Hopefully my upcoming vacation will help me out of this rut!

Breakfast

This morning I really felt like having fruit. So I grabbed an apple (think it was a honey crisp) to eat at work:


Really good and hit the spot!

This morning, while waiting for our ride, my husband told me I looked tired. This is never a good thing to be told. Once I got to work I checked my emails and put my to do list together and then it was straight to Starbucks. I got my usual:



Lunch

The apple and latte for breakfast did a good job of keeping me satisfied until lunch. Once 1:00 pm hit I made a mad dash for some Tuscan White Bean soup:



So good and so filling! Unfortunately I didn't read the calories before I ate this soup, about 530 for a cup. Ouch!

While I ate my lunch I flipped through this magazine:



After work Patrick and I are going to a couple stores to purchase things we need for our trip. Hopefully we will be home at a reasonable hour so I can tackle my home to-do list:
  • Load iPod

  • Find a nice going out outfit for trip

  • Layout the clothes I will wear on the plane

  • Purchase case for Gameboy

  • Wash swimsuit

  • Clean kitchen counters

  • Make list of what I need on plane

  • Look at downloading ecto on computer?

For me, the essentials are gum, magazines, book, iPod and sinus medication. Oh, and I can't forget about the noise canceling headset and water!

Playing Catchup

Wow, these past 2 weeks have been a whirlwind! So much going on and no time to blog. In the next couple days I will be getting back on my blog track. Here are a couple posts that will be appearing on Veggies 'N' Cake in the next couple days:

Breakfast

Stopped at Caribou and picked up a low-fat Vanilla latte. I love that Caribou gives me 3 shots of espresso with the large latte!

I couldn't resist getting a french toast muffin:


The muffin was big so I just ate half of it and it was great.

Junk Food Hangover

Well, yesterday was a junk food fest. When I eat a ton of junk food it leaves me feeling blah. No energy, stomach ache and complete laziness. Good thing I got a ton of errands and house work done before all the junk got in my belly!

Today will be the opposite of yesterday. I absolutely need vegetables today and I do believe a salad is in my near future.

Right now I'm sipping on a Caribou ho ho white chocolate peppermint latte. Of course I ordered it with skim milk and no whip, it is supper good!


I have a lot I would like to accomplish today. Here is a look at my Sunday to do list:
  • Clean Kitchen
  • Clean Bathroom
  • Laundry
  • Put up Christmas Decorations (hopefully it will be today's holiday post)
Well, I better get going!
