Labor Day Weekend (in pictures)

Work has been crazy busy and I haven't had the time to put together a proper post.

Tracey's Runza!

For those of you who grew up in or near Nebraska you will know what I'm referring to when I talk about a Runza. Since moving away from Nebraska I have missed many things. I miss my family, the spirit of Husker game days, seeing the stars, BIG storms and RUNZA's!

I introduced my husband to Runza's pretty early on in our relationship and he was hooked! His love for the Runza may have played a small part in why I ended up marrying him, I kid. I think;)

Runza's are great game day food so I decided the Superbowl was the perfect time for me to attempt to bake them.


Ingredients:
  • 1 lb lean ground beef
  • 1 medium onion
  • 4 cups cabbage
  • Salt
  • Pepper
  • Lawry's Season salt
  • 2 containers refrigerated pizza dough

Cut up, about, 4 cups of cabbage.



Dice 1 medium sized onion.


Place 1 pound of lean ground beef and diced onions into hot skillet. Season with salt, pepper and Lawry's Season Salt.


Cook until browned.


Add cabbage to the skillet.


Cook until cabbage is wilted.


I didn't have time to make my own dough so I just bought some pizza dough from the fridge section in the grocery store.


Remove the dough from the tube.



Unroll the dough and cut into 6 inch squares.


Place a spoonful of the meat mixture into the center of the dough square.


Fold dough around the meat and place on greased cookie sheet. I used olive oil on my pan.


Make sure all corners of the dough are sealed so mixture does not come out while cooking.


Place in a 350 degree preheated oven and let cook for 20 minutes.


Finished product! I was so excited to taste these babies. You have no idea!

SO GOOD!!! This recipe is a keeper for sure and it was perfect for the Superbowl!

I made myself a simple salad while I waited for the Runza's to bake.



Patrick and I didn't forget about the boy's, they each got a bully stick. After all it was their Superbowl as well!



They loved them! These are one of their favorite treats and it keeps them busy for a long time!

Huskers Win!!!

Huskers Win!!!

I'm so excited that Nebraska football is back! I'm so proud of the boys!

I accomplished a lot of chores today which makes me very happy and hungry.

Dinner

Once my husband got home we started planning our dinner. We started off with a salad:


I tried a new type of cheese on the salad, Grana Padano. My husband really liked the cheese but I'm undecided. It wasn't bad I just need to try it again:


Because today was a Nebraska game day we decided to order in some pizza.

Here is a look at the toppings we like to put on any of the pizza's we get/make:


I had thin crust cheese pizza with peperoni and green olives and a couple buffalo chicken bites:


I also made a large Spaghetti Squash. My husband and I are both going to work on eating better during 2010. I wanted to have this in the fridge for us to heat up and make an easy good dinner.

I'm so glad I discovered this veggie in 2009. We both really enjoy it!


Right now I'm painting my nails this color:



Haven't worn this color in awhile but I do like it.

I'm off to bask in the glow of the Nebraska Cornhusker win!!! WooHoo!!!

Internet Issues and Other Stuff

I'm having internet issues at home so I wasn't able to do my holiday post yesterday. Don't worry once my connection is up and running I will make up for it!

I want to congratulate the Nebraska senior defensive tackle, Ndamukong Suh. He won the Lombardi award last night and is up for the Heisman. He is the first defensive tackle to be invited to the Heisman award ceremony since 1994! (For those of you who don't follow sports, Suh is a college football player ;) )

Tonight Whole Foods South Loop in Chicago is having a Cook, Eat, Blog event. I love this store. Click on the link and check it out!

Crossing my fingers that my husband will be able to work his magic and fix my computer tonight.
